Ingredients
- 1 cup pitted dates
- ¾ cup raw cashews (or use ½ cup raw almonds and ¼ cup raw walnuts)
- ½ cup unsweetened cocoa powder (divided)
- 2 ripe bananas
- 4 tablespoons creamy (unsweetened almond butter)
- 4 tablespoons raw (organic honey (vegans, use maple syrup or coconut nectar/syrup))
- 1 teaspoon sea salt
- 2 tablespoons raw cacao nibs (optional)
Instructions
- Put dates in a bowl with warm water, allow dates to soak for 30 minutes, then drain.
- Mix together dates, almonds, walnuts, ½ teaspoon sea salt, and ¼ cup cocoa powder in a food processor until well blended.
- Spread mixture in a parchment lined 9×5 loaf pan until evenly distributed, and press down gently with a spoon.
- Mix together bananas, almond butter, honey, ½ teaspoon sea salt and other ¼ cup cocoa powder in the food processor until well blended.
- Spread mixture over bottom layer until evenly distributed. If you have cacao nibs, sprinkle them on top. Place in freezer for 30 minutes.
- Cut into 16 squares.
- Re-freeze whatever you don’t eat, and enjoy another time.
