Green Tahini Sauce

A great sauce to use for salads or with the baked falafel. Or both!

Ingredients
  1. 3 garlic cloves, crushed
  2. ¾ cup coarsely chopped fresh cilantro
  3. ¾ cup coarsely chopped fresh parsley
  4. 1 teaspoon ground cumin
  5. 2 teaspoons sea salt, more taste
  6. 1 cup tahini
  7. ¼ cup fresh lemon juice
Instructions
  1. Pulse garlic, cilantro, parsley, cumin, and salt in a food processor or blender until ingredients are combined.
  2. Add tahini and lemon juice; process until smooth and creamy.
  3. Keep the motor running and slowly add ¾ cup water in a steady stream, add more water as needed until the sauce is creamy and pourable. Season with salt, to taste.
