Description

A healthy, raw, vegan, gluten-free, and paleo approved Ageless Diet dessert. The salt is a terrific tasty contrast with the sweet of the dates and almond milk. This is a great alternative to store-bought energy bars.


Ingredients

Scale
  • 2 cups raw cashews (or almonds if you’d prefer almond bars)
  • 1 teaspoon sea salt (preferably Himalayan pink sea salt)
  • 2 cups pitted dates
  • 2½ tablespoons coconut oil (softened or melted)
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla

Instructions

  1. Soak the dates in hot water for 20 minutes. Drain the water from the dates.
  2. In a food processor or blender, pulse nuts for a minute. Then add dates, sea salt, vanilla, coconut oil, and almond milk.
  3. Press the mixture into a parchment lined, 8″x8″ baking tray, refrigerate for at least 15 minutes, and cut into squares. Yields about 10-12 squares.
