Ingredients
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 1 cup plain kefir plus 2 tablespoons
- 1 tablespoon canola oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups frozen berries (blueberry, blackberry, and raspberry work best)
- Butter
- Local raw honey
Instructions
- In a small saucepan over a low heat simmer the frozen berries until they are warmed and syrupy. About 10 minutes.
- In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, whisk together kefir, canola oil, egg , and vanilla extract.
- Pour wet ingredients over the dry ingredients. Whisk until combined.
- Heat a griddle pan or non stick skillet over medium heat with a tablespoon of butter. Once butter is totally melted, pour about 1/4 of a cup of batter onto the hot griddle pan, spacing out the pancakes a few inches from each other. When the pancakes start to bubble up, flip and cook until pancakes are lightly browned.
- Serve pancakes with a pat of butter, a drizzle honey, and the warmed berries.
