Ingredients
- 1 cup organic rolled oats
- ½ cup ground flaxseed (hemp seeds or chia seeds)
- 2 tablespoons freshly ground organic dark roast coffee beans
- ¾ cup creamy (unsweetened almond or sunflower seed butter)
- ¼ cup unfiltered (raw honey (maple or yacón syrup, if vegan))
- 1 teaspoon vanilla
- ¼ cup raw cacao beans or nibs (if whole beans, coarsely chop)
- ¼ cup dried currants
- 1 teaspoon sea salt
Instructions
- Combine oats, flaxseed and/or chia and freshly ground coffee together in a medium bowl until thoroughly mixed.
- Add almond butter, honey, sea salt, and vanilla.
- Once blended, fold in dried currants and cacao nibs. Thoroughly combine.
- Let chill in the refrigerator for 15-20 minutes.
- Once chilled, roll into balls or bites about 1 inch in diameter. This recipes should yield about 10-12 balls.
- Store in an airtight container and keep refridgerated, for up to 1 week.
