No Bake Coffee Bites

No-bake, raw coffee bites are energizing, tasty, and addictive.

Ingredients

  • 1 cup organic rolled oats
  • ½ cup ground flaxseed (hemp seeds or chia seeds)
  • 2 tablespoons freshly ground organic dark roast coffee beans
  • ¾ cup creamy (unsweetened almond or sunflower seed butter)
  • ¼ cup unfiltered (raw honey (maple or yacón syrup, if vegan))
  • 1 teaspoon vanilla
  • ¼ cup raw cacao beans or nibs (if whole beans, coarsely chop)
  • ¼ cup dried currants
  • 1 teaspoon sea salt

Instructions

  1. Combine oats, flaxseed and/or chia and freshly ground coffee together in a medium bowl until thoroughly mixed.
  2. Add almond butter, honey, sea salt, and vanilla.
  3. Once blended, fold in dried currants and cacao nibs. Thoroughly combine.
  4. Let chill in the refrigerator for 15-20 minutes.
  5. Once chilled, roll into balls or bites about 1 inch in diameter. This recipes should yield about 10-12 balls.
  6. Store in an airtight container and keep refridgerated, for up to 1 week.
