Sea Bass with Lime and Ginger

Ingredients

  • 4 tablespoons of fresh lime juice (about 2 limes plus lime wedges for garnish)
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons chopped fresh cilantro (plus cilantro for garnish)
  • 1 tablespoon minced peeled fresh ginger
  • 1 tablespoon minced shallot
  • 2 teaspoons of toasted sesame oil
  • 2 tablespoons neutral oil (grapeseed or safflower)
  • 2 6- ounce sea bass fillets (each about 3/4 inch thick)

Instructions

  1. Preheat grill to high or oven to 500°F.
  2. Whisk 1 teaspoon sesame oil, 1 tablespoon soy sauce, and 2 tablespoons of lime juice in a small bowl. Place the fish in a pan and pour this marinade over it. Marinate for 10 to 30 minutes.
  3. Mix the remaining lime juice, soy sauce, cilantro, ginger, shallot, 1 teaspoon sesame oil, and 1 tablespoon neutral oil in small bowl. Season sauce with salt and pepper.
  4. If using a grill, brush a pan or cast-iron skillet with oil, cook fish in the pan.
  5. If using oven, brush baking dish with remaining oil. Arrange fish in prepared dish; turn to coat. Sprinkle fish with salt and pepper; spoon sauce over each fillet.
  6. Roast or grill fish until just opaque in center, about 12 minutes. Top fish with remaining sauce, garnish with lime wedges, and cilantro, and serve.
