A vegan, healthy spin on a chocolate peanut butter ice cream.

Ingredients
- 4 medium ripe (organic bananas, peeled and sliced)
- 1/3 cup of organic (unsweetened peanut butter)
- 1/4 cup unsweetened (100% cocoa or cacao powder (choose a good quality cocoa, it makes a big difference))
- optional Cacao nibs and salted, dry-roasted peanuts, for garnish
Instructions
- Peel the bananas
- Slice into pieces, like coins
- Freeze (do not stack the banana pieces on top of each other) the banana for at least 2 hours
- Blend the bananas and peanut butter until smooth, scraping down the mixture until fully blended
- Add the cocoa powder, blend until it’s incorporated.
- Store in freezer, if not serving immediately, allow to 5-10 minutes to soften before serving.
- Garnish with peanuts and cacao nibs.
Notes
I find this dessert is best if served immediately after blending. Since it takes about 5 minutes to prepare, this is a fairly easy dessert to make quickly.
