A vegan, healthy spin on a chocolate peanut butter ice cream.

Ingredients

  • 4 medium ripe (organic bananas, peeled and sliced)
  • 1/3 cup of organic (unsweetened peanut butter)
  • 1/4 cup unsweetened (100% cocoa or cacao powder (choose a good quality cocoa, it makes a big difference))
  • optional Cacao nibs and salted, dry-roasted peanuts, for garnish

Instructions

  1. Peel the bananas
  2. Slice into pieces, like coins
  3. Freeze (do not stack the banana pieces on top of each other) the banana for at least 2 hours
  4. Blend the bananas and peanut butter until smooth, scraping down the mixture until fully blended
  5. Add the cocoa powder, blend until it’s incorporated.
  6. Store in freezer, if not serving immediately, allow to 5-10 minutes to soften before serving.
  7. Garnish with peanuts and cacao nibs.

Notes

I find this dessert is best if served immediately after blending. Since it takes about 5 minutes to prepare, this is a fairly easy dessert to make quickly.
