Frozen Chocolate Brownie Bars

Ingredients

  • 1 cup pitted dates
  • ¾ cup raw cashews (or use ½ cup raw almonds and ¼ cup raw walnuts)
  • ½ cup unsweetened cocoa powder (divided)
  • 2 ripe bananas
  • 4 tablespoons creamy (unsweetened almond butter)
  • 4 tablespoons raw (organic honey (vegans, use maple syrup or coconut nectar/syrup))
  • 1 teaspoon sea salt
  • 2 tablespoons raw cacao nibs (optional)

Instructions

  1. Put dates in a bowl with warm water, allow dates to soak for 30 minutes, then drain.
  2. Mix together dates, almonds, walnuts, ½ teaspoon sea salt, and ¼ cup cocoa powder in a food processor until well blended.
  3. Spread mixture in a parchment lined 9×5 loaf pan until evenly distributed, and press down gently with a spoon.
  4. Mix together bananas, almond butter, honey, ½ teaspoon sea salt and other ¼ cup cocoa powder in the food processor until well blended.
  5. Spread mixture over bottom layer until evenly distributed. If you have cacao nibs, sprinkle them on top. Place in freezer for 30 minutes.
  6. Cut into 16 squares.
  7. Re-freeze whatever you don’t eat, and enjoy another time.
