Raw Cacao Energy Bars

This recipe comes from my friend Lee-Ann in South Africa. And, it’s an easy raw dessert that doubles as a post-workout energy bar with good-for-you ingredients: coconut oil, dates, almond butter, and raw cacao nibs. A super energizing treat that’s gluten-free, vegan, and raw.

Ingredients

  • 1 cup unrefined (organic coconut oil)
  • 1 cup almond butter
  • 2 cups raw cacao nibs
  • 1 cup pitted dates
  • 1 teaspoon sea salt

Instructions

  1. Soak the dates for about 20 minutes in hot water, once they’re soft, drain the water.
  2. Soften the coconut oil (place the container in hot water).
  3. Place the dates, sea salt, coconut oil, and cacao nibs in high speed blender or food processor until blended.
  4. Add almond butter and stir until all ingredients are incorporated.
  5. Spread the mixture on a cookie sheet or in a 9×13 glass or tin dish. Freeze for 30 minutes, and then slice into bars.

Notes

All these ingredients, including the cacao nibs, are readily available these days at most grocery stores. This recipe yields a good amount of bars, keep refrigerated or in the freezer until ready to use.
