I wanted to recreate those tasty energy bites – balls or truffles or whatever you want to call them, but with less sugar. Raw rolled oats energy bites are perfect for a post-workout snack. Gluten-free, raw, ageless, and delicious.

Ingredients

Scale
  • 1 cup dry organic rolled oats
  • ⅔ cup toasted coconut flakes
  • ¾ cup creamy (unsweetened almond, peanut, or sunflower seed butter)
  • ½ cup ground flaxseed
  • ¾ dried (unsweetened currants, cranberries, cherries, or golden raisins)
  • ¼ cup raw cacao nibs
  • ⅓ cup raw (unfiltered honey (maple or yacón syrup if vegan))
  • 1 tablespoon chia seeds or hemp seeds (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Instructions

  1. Stir all ingredients together in a medium bowl until thoroughly mixed.
  2. Cover and let chill in the refrigerator for 30-45 minutes.
  3. Once chilled, roll into small balls or bites (about 1 inch in diameter).
  4. Store in an airtight container and keep refrigerated for up to 1 week.
